ABSTRACT

Wine has been widely consumed beverage in the world for centuries with very obvious commercial value and social importance. Numerous studies have shown that the moderate consumption of wine, especially red wines, improves good health and longevity [1,2].

The analysis of trace metals in wine is of great importance for quality and authenticity control of wine, metals’ bioavailability, and toxicity. The presence of elements as Al, Cr, Mn, Co, Ni, Cu, Zn, Rb, Sr, Ag, Cd, U can influence the wine making process or can change the taste and quality of the final product.

This paper outlines the optimal conditions for metals determination in wine samples (red and white wines) by inductively coupled plasma mass spectrometry, after microwave mineralization.

Through the determination of the recovery rate of the metals added to the samples before mineralization, has been verified the trueness of the method. The global recovery after destruction in a Mars 5 Microwave oven was between 80% and 100% for all the elements, registered in theoretical limits. In addition, through repeatability on the wines, was evaluated the precision. For the analyzed samples, the results obtained were under the recommended values for concentration levels.
